Crunchy Borage Leaves Tempura

Forget about regular chips, borage tempura is delightful and so easy to prepare!











Easy peasy


2 cups of tender borage leaves
borage blossoms

Ingredients for the batter:

1/2 cup of flour
1/2 cup of cold sparkling water
1 teaspoon of cornstarch
A pinch of salt

Ingredients for frying:

sunflower oil or any seed oil


  • Use the young and tender borage leaves as the bigger ones are covered in a prickly fuzz.Wash and dry them well.
  • In a bowl, start making the batter, mix all the ingredients and whisk well, then dip the leaves into the bowl and fry until crispy and crunchy.


The batter shouldn't be too thick or too runny, the right consistency is similar to the yoghurt.

Studies show that borage may help alleviate inflammation, reduce symptoms of asthma, and improve skin health.
